New Ingredient: Radishes

Belonging to a CSA and exploring the exotic produce section at the grocery store has made me try all sorts of ingredients I’d never pick up at the grocery store — rhubarb and swiss chard and daikon radishes, oh my!

Up this week: radishes.

Radishes always seem like an unnecessary salad garnish, adding a nice pop of color but no taste benefit. Truthfully, I’m most familiar with radishes as a version of kimchi. You know you lived in Korea when…?

Still, when radishes showed up on the CSA shopping list this week, I was happy to try something new for my New Ingredient Challenge. But… what to do besides chop ’em up for a salad?

Martha to the rescue! (just as Ina Garten knows all, she-who-needs-no-last-name comes through in a pinch sometimes, too.) Her Lemon-Tarragon Salmon over Asparagus combined some of my favorite ingredients — salmon, farm-fresh asparagus and tart lemon. Such a great combination of flavors.

Plus, any dish that can be assembled on one easy package is my kind of meal. Everything — chopped radishes, asparagus, salmon and a marinade of olive oil, lemon zest and juice, tarragon and S&P — goes onto a sheet of aluminum foil and wrapped up.

15 minutes in the oven later…


This was a perfect summer meal, especially paired with an ear of corn. The zest creates a strong lemony flavor that infuses every bite. As for the radishes, my new ingredient of the week? Honestly, the lemon and tarragon had so much flavor that any radish ‘taste’ was indiscernible. Maybe this isn’t a fair way to assess whether I like radishes or not, since they didn’t add or detract from the dish, but it definitely added a beautiful pink tinge to the entire meal.


Now that pre-season CSA has ended, we’ll start getting more early summer veggies: garlic scapes and kohlrabi are just two of the new-to-me ingredients that should appear in this week’s local produce haul.

    Raw radishes + butter + salt is a great way to eat raw radishes!
