Parsley, Sage, Rosemary and Thyme

Morning! I’m enjoying a big jar of OIAJ right now and wishing it would never end. Is there a way that every bowl of oatmeal could be eaten from a nearly-empty peanut butter container? I’m going to start taking a collection in my building. πŸ˜‰

It seems to be snowing a lot in the rest of the country and flurries are in the forecast for this morning but right now it’s just grey and windy. A nice day to not have to go into the office. πŸ™‚

Yes, I’m off work again today — every Monday in December, which is pretty fabulous — and love being able to wear warm sweats and drink coffee all day if the mood strikes me. Then again, my office is pretty casual so I could wear warm sweats and drink coffee there, too, but it’s more comfortable on my couch than a desk chair. πŸ˜‰

It’s also the perfect day for leftover vegetable soup and some hearty yet light vegan rosemary oatmeal biscuits.

Marie called them scones but I’m definitely going with biscuits on this one. You know that I like any recipe that is fast and easy — well, nothing could be faster than these, which take 15 minutes start to finish.

Simply combine dry ingredients: 1/2 cup oats, 1/3 cup whole-wheat flour, 1/3 cup all-purpose flour, 1 tsp baking powder, 1/2 tsp salt and 1 tsp rosemary.

Use your hands to cut in 2 tbsp of butter (or Earth Balance, my choice).

Add 1/2 cup milk of choice (I used rice milk), mix and plop four biscuit patties on your baking sheet.

I sprinkled a little more rosemary and salt on top of the biscuits for extra flavor, then into a 475* oven for 11 minutes. Don’t put them on the bottom rack — I speak from experience on this one. πŸ˜‰

I loved the addition of rosemary to an otherwise basic recipe! It added such a nice touch of flavor and the salt also excited my tongue. An entire range of herbs would make an excellent topping to these biscuits but definitely double the recipe — I ate the entire batch in two days. πŸ˜€

Do I need a better camera and better lights to take better photos? Yes.

Do I need better biscuits? Nope, I’m set.

Off to enjoy my day-off with a morning showing of ‘Harry Potter and the Deathly Hallows,’ then meeting up with friends later in the afternoon.

    3. I think I’m almost done shopping. My sister is so hard to shop for, she’s who I have left πŸ™‚ Definitely buying less this year, though. I’m doing more homemade food gifts this year, like Jenna’s chocolate PB bars for my dad, truffles for my mom, etc.

    The bf and I decided to set a small budget for Christmas this year–which is fine with me. I’d rather we save our money and travel in 2011.

    Just made these biscuits and my Mom had a fresh rosemary plant so I used lots of rosemary! SO GOOD! thanks!
