A Special Monday Breakfast

I’m off work today — and every Monday in December! — so it’s a strange feeling to still be in sweats at 8am. Strange, but nice. 😉

I’ve been up since 6:15, however, since that’s when a helicopter began hovering directly overhead and didn’t go away for 5 minutes. That doesn’t sound like very long but when a hovering helicopter jolts you out of bed, it seems like eternity. (The National Naval Medical Center is right across the street.)

Anyway, it was nice to laze around in bed with a book for a while before my stomach not-so-gently reminded me that it wanted food!

Okay, I confess that this is an old photo. But I was way too lazy to dig my camera up so… 😉

I made cinnamon-sugar French toast with homemade bread topped with pomegranate arils and blackberries, with a splash of real Vermont maple syrup.

Happiness is here to stay! What a way to start a day off work!

Originally I was going to meet up with some friends for some museum-ing but my car desperately needs new tires so today might be the day to get that done.

It’s fun to have a special breakfast on a weekday. I went a bit overboard at the grocery store — nothing I won’t happily eat, though! — so suddenly the refrigerator and cabinets are overflowing with delicious treats that I usually don’t stock up on. I’ve been missing variety lately so… we’re all stocked up and ready for winter! 😀

What’s your favorite ‘special’ breakfast? I always make pancakes Sunday morning — yesterday was pumpkin spice, yum!
